Hills Distilling Co.

Hills Distilling Co. is the first locally owned distillery in Sydney’s Hills District, producing gin, vodka and Australian white malt spirit using locally sourced ingredients and contemporary distilling processes.

The Rouse Hill distillery has a cellar door, available to visit between 3pm and 6pm on Fridays, and there's a retail space stocked up with bottles of spirits and garnishes and salts to accompany.

Gin production tours and tastings led by the passionate distillers are available between 3pm and 6pm on Thursdays (by appointment), and include insights and first-hand encounters with raw ingredients and processes, exploring the distillery’s mezzanine level with tanks and barrels for blending and ageing spirits.

Hills Distilling’s white malt spirit is a collaboration with neighbouring makers Australian Brewing Co., using a bespoke amber ale recipe to double pot-distill the moonshine-style spirit for a silky spirit with subtle spiciness.

The multi-level distillery space was designed by Sydney architects Archebiosis, and remains industrial in feel while drawing from a palette inspired by the ingredients and botanicals used in production.

Every bottle of Hills Distilling Co. gin, vodka and malt spirit is filled, polished, and packed on site, and signed with a mark from the maker who bottled it for a personal touch.
