The verdict

Prepare yourselves, people, Merivale has just taken over Hotel Centennial so you know it’s gonna be good. They’ve assembled a couple of their best two chefs for the revamp: The Paddington’s Executive Chef Ben Greeno and Fred’s Danielle Alvarez. No guesses for the style of the menu, when they’re longtime lovers of local produce and restrained simplicity. We’re listening.

The new menu has been infused with a distinct Mediterranean flare. Whether you’re in the mood for wood-fired oven flatbreads with minced lamb, yoghurt and pickled chilis, grilled flounder with seaweed salsa verde, or a classic steak frites, they have it all. Add a lemon verbena custard tart with fresh peaches and you’ve got one satisfied stomach.

No major changes are set to be made to the interior so expect the same laidback-luxury inspired by the homes in Woollahra to stick around.
