Since launching in 2020, founder Sandra Hudson has built the business around a simple idea: gluten-free baking should be every bit as satisfying as the traditional version—backed up by her accreditation from Coeliac Australia. That philosophy runs through everything on the menu, from loaded sandwiches and bagels to brownies, cookies and celebration cakes. Regulars, however, will tell you the bread is the main event.
Hudson's signature loaf has become a local favourite thanks to its soft texture and versatility—whether it's stacked into a sandwich or simply toasted and slathered with butter. The sweet offering is just as tempting, with pastries, cakes and an award-winning lamington among the highlights.
The Oxford Street bakery has reopened with a revamped fit-out, extra seating and more room to showcase its growing range of gluten-free goods. So whether you're coeliac, intolerant or simply appreciate a well-made croissant, Hudson's continues to prove that great baking doesn't need gluten to deliver.
