Part cocktail bar and part general store, Huelo is the newest addition to King Street. Behind the multipurpose venue is Dre Walters (Old Mate's Place) and Swan "Swanny" Kanongataa (ex-Bistecca and The Rover).
Set over two floors, you'll find the store up front—selling a mix of sardines, handmade ceramics, truffle oil, pasta, Nonna's passata, and other pantry staples sourced from both near and far. Here you can also pick up deli sandwiches and fried squid po' boys to go, or pause a while and tuck into small plates and a glass or two of wine.
Huelo's "Oysters and Dreams" happy hour runs 4pm-6pm Wednesday through Sunday and involves $2 oysters and magnums of champagne.
Behind a hidden door and out the back is a 12-seat cocktail bar that rolls out into a courtyard. "If the general store is old world, then our hidden cocktail bar is Miami tropical glam meets New York
brasserie," says Kanongataa. "The cocktails are fun, imaginative, and delicious.”
The name Huelo translates to "sun rays" in Tongan—representing both warm hospitality and Kanongataa's Tongan heritage.
A larger upstairs bar is due to open at Huelo later this year, perfect for larger groups and larger dishes too like steak or lobster frites.

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
