The Verdict
Cue the meat! Tender, mouth watering, mind blowing meat. Hughes Barbecue has arrived in Sydney and is more than ready to deliver on your every meaty desire. And vegans, don’t you dare avert your eyes—we even have a little something for you too.
Labelled the ‘new school barbecue’, Anton Hughes (chef and diabolical mastermind) mixes passion and tradition with his Texan-style of BBQ and new school edge.
Sitting amongst the rustic yet modern beer garden in the George Hotel Waterloo, you can please your palate with all of the traditional dishes. Grab their beef brisket burger and a side of juicy chicken wings then spice up your dish with adventurous flavours like kimchi, barbequed crocodile or even a vegan smoker (told you we had your back). This one is a pulled pork-style jackfruit and yes, you do need it in your life.
FYI this place features all the classics of a ‘60s and ‘70s diner with red and white checked tablecloths and a stage for gigs to boot.
