The verdict
It's not often that inner-city Sydney bars can shake off the corporate culture that pervades the area, but Since I Left You manages to feel like a small neighbourhood haunt, oozing charm (and booze) in its dimly-lit interior. It's 1920s speakeasy feel, with the reclaimed wooden bar and industrial courtyard is offset by a modern approach, complete with upbeat service and an effortlessly cool funk/soul soundtrack.
The bar staff at Since I Left You regularly offer blackboard drink specials as well as their signature cocktails, a concise list of international and local wines and shelves stocked with spirits.
Everything is designed to be shared so of course there's a menu of some of our favourite things in life; cheeseburger toasties, mac 'n' cheese waffles and some pretty damn delicious poké bowls. We'll have all the food, thanks!
We know you're all ready to head down to this joint, but before you do, listen in because we just found another reason and it might just trump the lot. Bar Demo
Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
