Jonathan Faro has earned himself a rep for giving Sydney some pretty epic pizzas. First up was Society Pizza—a Bondi neighbourhood favourite, sporting Faro family recipes and Neapolitan classics. The latest is Johhny Gio's, Faro's fast-paced, pint-sized pizza joint on Bondi Road with platefuls of character.
It has the vibe of a New York City-style takeaway joint, but, Faro assures us, all the best parts and pieces of proper Italian pizza. Expect crispy bases and big flavours.
"For some people, pizza is all about the dough, for others, it’s about the toppings. Johnny Gio’s brings loads of both," he says. "The subtle smokiness of the wood-fired oven brings out big flavours like guanciale and caciocavallo cheese."
Faro recommends trying "Sammy the Butcher", a pizza he says is "Italy’s version of a meat-lovers". We're a big fan of the "Burrata Queen" with cherry tomatoes, garlic confit and a whole burrata ball in the middle. "The Boss" features peppers, Italian sausage and salted ricotta, and "Sonny's Favourite" is topped with capsicum cream, chorizo, asiago cheese and jalapenos.
The "Mickey Blue" is a total dream too: layered with caciocavallo, gorgonzola, mozzarella, whipped ricotta and truffle.
While Johhny Gio's is primed for takeaway and home delivery (thanks to that crispy base), you can hang out under the disco ball for drinks—the venue seats just 25.
And if you're not feeling pizza, the menu has a neat select of non-pizza things. Think mac and cheese, lasagne, arancini, a six-hour bolognese and (because, NYC), ma's meatballs.
