The Verdict
We love a little spectacle with our dinner and cocktails, but this little Japanese inspired bar and restaurant in Surry Hills is taking it that much further. On the casual side of the menu, you've got fried chicken as mindblowing as the cocktails (masterfully made in front of you by Flynn McLennan, who used to shake things up at Zeta Bar). On the theatrical side of the menu, order the maple smoked scallops with whisky aroma. And for plain damn delicious, you can't go past the smoked ox tongue skewers. We challenge you to have just one.
If you're a little new to the concept of Japanese cocktails, then just let Kagura know what you're in the mood for and they will take care of the rest. Personally though we're recommending Ikkyu's Tea Party, a sweet matcha, genmaicha and vodka cocktail served in a teapot to share (so we can mooch some off you).

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
