Lamin8 Viennoiserie & Patisserie is Lane Cove’s newest baked goods haven. Its name an ode to the golden process of sourdough lamination, which brings about the ultimate filling of flaky, airy layers. And this is exactly what Lamin8 is all about, chewy crumbs and crisp crusts.
It’s a value that holds true to all the made-from-scratch goodies here. The bakery specialises in all things Viennoiserie, a type of baking style originating from Austria which literally translates to “things from Vienna” in French but lends itself to baked goods from a yeast-leavened dough.
That means you can expect the menu at Lamin8 to sport flaky goodness like croissants, danishes, palmiers, and brioche but with a kaleidoscopic twist: like raspberry rippled croissants, matcha palmiers, and the bakery’s standout purple sourdough, made with natural blue-purple pea flower.
And while Lamin8 definitely goes hard on all the OG flaky pastries, you’ll actually find over 60 different treats to bag on the way home including all sorts of cakes, petit fours, macarons, pies, toasted sandwiches, and even caffeinated cups of the good stuff too.
