For years, the kind of fire-led dining experience that chef Dany Karam envisioned for Magma was largely confined to Sydney's CBD. Instead of opening in the city, Karam brought it to Canley Vale, creating a destination restaurant that places Western Sydney firmly in the conversation around Australia's top steak and grill venues.
Located within Cabravale's new lifestyle precinct, Magma centres around a custom-built open-flame kitchen, an in-house dry-ageing room and a menu shaped by Karam's Lebanese heritage, years working over fire and long-standing relationships with some of Australia's best producers. The dining room seats more than 140 guests beneath soaring ceilings, with a glass-fronted butchery showcasing premium cuts ageing on site.
Beef is naturally a major drawcard. Magma works closely with renowned Victorian producer David Blackmore, serving a range of premium wagyu cuts alongside signature dishes that extend well beyond the grill. Expect everything from Abrolhos Island scallops and Queensland spanner crab to semolina gnocchi with brown butter and seasonal vegetables cooked over charcoal.
The drinks offering matches the ambition of the kitchen, with a substantial wine collection, a dedicated whisky bar and a cocktail list designed to complement the venue's smoke, char and fire-driven flavours.
More recently, Magma has introduced a Sunday roast menu that takes the traditional format in a decidedly elevated direction. Think premium cuts carved tableside, wood-fired sides and desserts designed for sharing—continuing Karam's broader mission of creating a restaurant built around gathering, generosity and exceptional produce.
