The Verdict

This modern Chinese restaurant in Surry Hills is setting high expectations. The team in the kitchen honed their skills at Quay, Noma and Momofuku Seiobo, so there's plenty of inspiration on the menu from other continents too.

Think raw clams with cured honeydew and bonito for something a little less expected, or if you're a fan of spice, look for the cold cut chicken with sichuan spices and soy. Even the plainest of vegetables gets rock star treatment with a fish sauce and butter concoction.

Open for weekend lunches (long lunch, anyone?) and dinners every night except Mondays, head down to Master to learn a thing or two from the masters.
