The Verdict
Maybe Sammy is the creation of co-owners Stefano Catino, Vince Lombardo, and Andrea Gualdi.
Located in a charming spot in The Rocks, these guys serve up some of Sydney's most epic cocktails. So epic, in fact, it's the top bar in Australasia, according to the World's 50 Best Bars list, which has included it for five years and has it at number 15 for 2023.
The bar features a mix of pink velvet banquets and leather-clad stools and seats, but you’ll find the Hollywood Regency meets the Rat Pack and '60s-era Palm Springs aesthetic really comes to life with the huge marble bar topped with gold lamps, and the band of bartenders in white jackets with red carnations.
The bar team here whip up a string of signature cocktails that are a little left of centre (in the best way possible), but there are always perfectly executed classics available as well.
Maybe Sammy’s food menu has small snacks, which means olives, oysters, charcuterie, and cheese boards are all an option when you need to soak up the tipple.
Pop in for Maybe Sammy's mini martini happy hour, which is hosted every day from 4.30pm to 5.30pm. All mini martinis are $5.50 and there are seven variations to choose from—but our fave pick is the "Mini Sammy", which is made with Ketel One Vodka, Aperol, peach tea, and vermouth bianco.

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
