The verdict
Opening inside the one-time tobacco factory on Cleveland Street, Mjolner (pronounced Mjol-near) is a carvery and whisky bar in Redfern. It’s the newest venture by The Speakeasy Group, who operate Eau De Vie and The Roosevelt.
In case you don’t already know, Thor’s hammer is a Mjolner, just to give you a good idea of the theme of this Vikings-inspired bar. Now that we’ve got that out of the way, we can talk about more important things – like the fact that the drinks list will boast approximately 600 varieties of whisky. So even the pickiest whisky connoisseur should easily find something to satisfy.
The carvery serves comfort food and while the beast will change daily, depending on what is locally available, you can bet that they’ll be serving up bone marrow, sprinkled in dehydrated meat powder made from a selection of their cured meats from the open kitchen.
The combination of historic Viking features with contemporary Scandinavian design will keep you coming back to feast like a Viking God.

Bar Demo
Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
