The verdict
It’s no secret that we love a good rooftop bar, especially when it helps us combine a little bit of sightseeing, with sitting on our bums and sipping cocktails. Well, No.1 William is one of those kinds of places, sitting on level 4 of the iconic Australian Museum, this 180-seat restaurant boast floor-to-ceiling windows and an outdoor terrace that overlooks Hyde park and Sydney Harbour.
Head here anytime of the day (no, really), because they’re open for breakfast, which will see you feasting on classics like the William’s Eggs Benedict or a super healthy coconut, chia and quinoa granola with Greek yoghurt. We also have to mention that the coffee is by local Sydney roaster, The Little Marionette, which happens to be one of our all time fave brews.
For lunch, there’s sandwich specials as well as salads, burgers and steak. We obviously recommend that you leave it until later in the day, so you can settle in and shamelessly quaff a few wines while indulging in a chocolate molten lava cake or pavlova.

Bar Demo
Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
