Norma’s Deli

Fresh from the team behind Roller's Bakehouse and Butterboy, Norma's Deli is Manly's new Greek-inspired deli cafe and all-day diner, complete with cocktails, wine, bespoke olive oils, fresh-baked pita, and perfect saganaki. 

Inspired by owner James Sideris' grandmother and his Greek heritage, Norma's is all about the "romance of food when you need it most". In short, the essence of the good life in the Mediterranean.

All that romance is backed up by an all-star crew too: there's head chef Luke Papalia (former sous at Pilu),  general manager Mitch Macdonald (ex-Hubert), and head baker Darek Rojkowski (former pastry chef at Bert's). Oh, and a sourdough starter called Dario. 

The menu is generous and warm—just as all good hospitality in the Med should be. For breakfast, order up a half or whole spanakopita, Greek baked eggs, fresh croissants with classic condiments like Chantilly cream or mandarin marmalade, or a sweet Bougatsa pastry dusted in cinnamon and icing sugar. There's also taramasalata toast with soft-boiled eggs and bottarga and sides like saganaki, Norma's Greek sausages, and marinated feta. 

For lunch and dinner, kick off with warm marinated olives and a fresh baguette served with cultured french butter, housemade dips with fresh pita, Dolmades, and a range of greek salads and sandwiches served on sourdough.

For something heavier from the kitchen, you can order up pork souvlaki, moussaka, Normas rotisserie chicken, 12-hour braised lamb shoulder, and a Makarounes aglio olio. If snacking is more your vibe, charcuterie, cheese, and tins of Anchovies, sardines, and Bonito can be sliced and opened to order and come served with a fresh baguette. 

As for the design, the team enlisted the one-and-only George Livissianis to reimagine the 550 sqm space into a heritage-style European brasserie. 

Norma's opens on Wednesday 21 December 2022.
