A second venue by the team behind popular Pyrmont taqueria Nativo Mexican, Nu’u by Nativo is a two-storey Mexican restaurant and mezcal bar.

Nu’u is an indigenous Mixtec word from Oaxaca in southern Mexico (where owners Manuel Diaz and Diana Farrera hail from) meaning land or ground, and the restaurant aims to represent indigenous origins while celebrating the vibrant, festive soul of Oaxaca—which is also the home of mezcal.

In the kitchen, Manuel’s menu of Oaxacan and southern Mexican flavours uses techniques including metate (grinding on traditional stone), and slow cooking in green clay pots, while also integrating native Australian ingredients.

Standouts include tamal de la costa (steamed maize cake filled with grilled Moreton Bay bug), memela del mercado (grilled maize dough with chipotle manteca, bone marrow beans, Oaxaca cheese and marinated pork shoulder) and classic chile relleno: poblano chilli stuffed with shiitake picadillo, served over mole verde.

Diana (as Australia’s only certified mezcologist) has crafted a drinks offering that boasts a huge selection of artisanal mezcals exclusively available at Nu’u, and spotlights the sustainable and ethical practices required to protect the traditional mezcal production process.

She also collaborated with top Oaxacan bartenders to devise cocktails honing in on different flavour profiles in mezcal, taking their names from inspirational women from Oaxaca’s history and folklore, like the Maria Sabina with rosemary, tombola mezcal, mint, ginger and cucumber, or the Matlazihua combining elderflower, cuishe mezcal, hibiscus bitters and viola.

The 60-seat venue spread over two levels of a Victorian terrace house has an open kitchen on the ground floor, with a large open terrace with street views upstairs.

Oaxacan elements and textures run throughout, with a terracotta palette, traditional Mixtec handicrafts, and artworks including carved wood figures, clay sculptures and woven textiles.

Nu'u by Nativo will open on Friday 18 August.
