The dining room at Palazzo Salato Sydney

From the all-star team behind pint-sized pasta joints and wine bars Ragazzi, Fabbrica, Dear Sainte Eloise, and La Salut, Palazzo Salato is the Love Tilly Group's largest venue, seating 120 across two storeys in a heritage building in the CBD. 

Palazzo Salato is inspired by Gramercy Tavern in NYC and features a walk-in-only bar, a more refined restaurant space, and a private dining room for 20.

At the bar, you'll find Americanos and Nebbiolo poured alongside three of the four classic Roman pastas: carbonara, alla gricia, and Ragazzi fave cacio e pepe.

Meanwhile, in the dining room, the team is finally able to stretch their legs so to speak, taking their pasta to new heights thanks to a much larger kitchen space.

"For the first time, we have a kitchen with enough room to swing a cat," says Love Tilly group executive chef Scott McComas-Williams. 

"[This will allow] us to produce some of my favourite hand-shaped pastas like agnolotti dal plin, scarpinocc, and fagottini while still being able to grill, roast, and braise cuts of meat, veg, and fish from our long-time producers." 

As well as McComas-Williams, the Palazzo Salato team includes top talent from the group including Alex Major as executive chef (formerly head chef at Ragazzi) and general manager Adam Fogwell (former Ragazzi restaurant manager).

International talent has been pulled too with group sommelier Jade Febvre (former GM of Michelin-Starred Septime in Paris and London’s Terroirs wine bar) in charge of the 500-strong, international-leaning wine list. She'll be joined by head sommelier Julie Barbero of London’s Frenchie Covent Garden and Michelin-Starred La Chassagnette in the south of France.

As for the interior design, expect colourful custom artworks, brass accents, and classic Thonet bentwood chairs alongside leather banquettes for a polished but upbeat, vibey pasta and wine experience. 

“Palazzo Salato represents the next step in the evolution of the Love Tilly Group,” says Love Tilly co-founder Matt Swieboda. “Like us, it’s growing up. It’s a little more refined. But, it stays true to our ethos of being accessible and never stuffy.”

There's more to come too: Following the street-level bar and trattoria on Clarence Street, a second bar and outdoor dining space will open later in 2023, with a separate entrance off Kent Street.
