Phono Stage

If you stumbled upon Phono Stage without knowing where you were, you could easily assume you’d wandered into the backstreets of Japan. Tucked inside the former Nutie Donuts site on Beattie Street, this retro Balmain cafe is a coffee lover’s dream—especially if you nerd out over pour-overs and specialty beans.

It’s currently a one-man show behind the counter, led by owner Kevin Tu, who brings more than 15 years of experience spanning coffee training, wholesale, operations and business development. His most recent post was at Sydney coffee heavyweight Mecca Coffee, before he stepped away from the operational side of the industry to open a passion project of his own.

“Phono Stage really just comes from two things I’ve always loved: coffee and music,” Kevin tells Urban List. “I’ve been in specialty coffee for more than 15 years, and I felt like it was finally the right time to do something of my own.”

Ordering a coffee at Phono Stage isn’t necessarily a quick grab-and-go affair—although Kevin certainly has speed and precision on his side. Locals drift through the nondescript front door, many of whom Kevin already knows by name, picking up previous conversations and greeting familiar four-legged customers as he moves steadily behind the machine.

Inside, mid-century influences come through in the vintage furniture, warm colours, shelves of records and carefully assembled hi-fi setup. Kevin wanted the cafe to feel collected over time rather than overly polished, and the result is a space with the easy charm of a well-loved listening room.

While exceptional coffee is the first order of business, music comes a close second. The sound system is anchored by original Tannoy speakers from the 1970s, with Kevin moving seamlessly between his pour-over station and the turntable as he cycles through an extensive vinyl collection stored behind the counter.

There’s no set signature coffee just yet, so it’s worth asking which beans Kevin has on rotation. Those who prefer their coffee black can explore a changing selection of batch brews and pour-overs, while milk-based classics are also poured with plenty of care.

For something different, the yuzu honey matcha has quickly emerged as a favourite. Kevin developed the drink using honey from Rooftop Bees, an Australian-owned company that installs and manages beehives on commercial rooftops. A small cabinet of pastries and sweets—including chocolate croissants and cheesecake—covers anyone looking for a bite alongside their brew.

Kevin’s vision for Phono Stage is refreshingly simple: a welcoming neighbourhood cafe where people can drink excellent coffee, listen to music and linger without feeling rushed.

“I think people are enjoying smaller places that have their own personality and aren’t trying to do too much,” he says. “That’s probably what I’m leaning into here as well.”

Balmain may have its fair share of coffee shops lining the main drag, but Phono Stage is steadfast in its identity and ethos, setting it apart from anything else currently on offer in the area.

With its vintage soundtrack, carefully brewed cups and genuinely warm hospitality, this spot is proving a cafe doesn’t need to shout to make itself heard.
