The verdict

The Pyrmont Bridge Hotel is just like your local pub, but with way better views over the city. Set in the middle of Pyrmont, the drinks flow all day long (it’s literally open 24/7), so it’s the perfect place to pre game before a night out, or to settle in for Friday drinks. Their happy hour runs from 5pm–6pm and you should probably grab one of their delicious share plates while you’re there. Order the PHB grazing board for a trio of dips with flat bread and some crispy chick wings, or if you’re working on that summer body, then go for their pumpkin, rocket, and haloumi salad doused in a tangy pomegranate dressing.

It’s the perfect place for a night out with your cocktail loving friends. Grab a few summer share jugs to share between your mates–we’d go for their classic mojito with freshly squeezed lime, but the sangria will cool you down on a hot summer night. If wine is your bae, they’ve got you covered there as well, with a list covering rosé to sparkling, you’ll never want to leave.

Bar Demo

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
