Paying homage to Sussex Street’s dominant trade in the late 19th century, Sailmaker is a harbourside Sydney restaurant with a large focus on seafood and local produce.
Sailmaker’s ethos and culinary chops are best experienced at their incredible value Seafarer Dinner, which offers a three-course menu of sustainable Australian seafood for just $89pp Thursday–Sunday.
Beginning with a Mediterranean tapas table that guests can load up on to whet the appetite, diners can choose from six entrees and six mains featuring seafood from sustainable fisheries that practice eco-friendly farming or offer wild caught product, like Humpty Doo Barramundi, kingfish from Spencer Gulf’s Clean Seas, and Aquna Murray Cod from NSW.
As well as focusing on sustainable practices, the Seafarer Dinner is also indulgent with NSW oysters, Skull Island prawns and Fremantle octopus in the mix, and a selection of wines that also focuses on NSW producers is available to pair with each course. To finish, sweets like Basque cheesecake and brownies are offered from a roving dessert trolley, with elements like brûlée finished tableside.
