From ex-Momofuku chef Richard Borg, Smoking Gringos has arrived on the scene and is serving some of Sydney's greatest and sauciest birria tacos.
The hole-in-the-wall style joint near Blacktown Station has been pulling crowds, scoring TikTok video views, and selling out since opening earlier this month, August 2023.
The venture is headed up by Borg and his partner Jade Jackson. A part of the secret sauce is Borg's experience—as well as time spent in the kitchen at Momofuku, the chef is also one of the founders of Burger Head, and one of the headline chefs of Surry Hills' famed Master restaurant.
At Smoking Gringos, the birria is the star of the show. In a full two-day process, meat is smoked first, before being stewed for a steamy six hours. Tacos are grilled in beef fat, topped with tender, melt-in-your-mouth meat, and served with a saucy consommé for dipping.
The birria menu includes crunchy and soft tortillas and quesa tacos filled with gooey cheese. There are also nachos, smoked wings, corn ribs, and even loaded beef birria fries to really round out your experience of all things birria tacos.
