The verdict

Sydney just scored a brand new underground bar and since we all know everything tastes better when it’s hidden—you’ll love this one. And while hat making and vermouth may sound like an odd combination to some, it makes perfect sense to the legends over at Soultrap. 

The underground Surry Hills bar takes the owner’s love of millinery and combines it with our love of draaaaanks and like we said, it just works. Once you walk down the stairs into the basement bar, head straight for the bar and order yourself one of their killer cocktails.

Seriously, drinks are our first priority (always) and Soultrap is serving up allll of the cocktails. You’ll need to try our fave—the Australian Fare. We’re talking Woodford Reserve Rye, sweet and dry vermouths and Okar Amaro which makes for an unexpectedly delish tipple.

Food is next on the agenda and here, it’s all about the share plate. If you hate food envy more than anything else in the world, this is the right place for you. the menu is stocked with all manner of delicious thing, like cured meats and smoked ocean trout dip and once you’ve made your way through the menu, you’ll be hitting up the dancefloor.  Soultrap exclusively plays soul, funk and old school hip-hop so yeah, get ready to dance off all those cocktails.

Bar Demo

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
