The Verdict:

This September, Louis Tikaram brings his acclaimed Cantonese restaurant to Manly Wharf, marking the Sydney return of a chef who spent a decade learning his trade in the city's kitchens before taking Stanley to cult status at Brisbane's Howard Smith Wharves. Now, the Northern Beaches gets its own version, 212 seats spread across indoor and outdoor dining, a private dining room and a dedicated bar, all looking straight out over the harbour.

The setting takes its cues from Hong Kong's Stanley Bay, with live seafood tanks, a custom-built duck oven and tableside Peking duck service, adding a theatrical element to the dining experience. For Tikaram, the opening is a full-circle moment. He arrived in Sydney as a young apprentice and spent ten years working through some of the city's most respected kitchens, Longrain, Bentley Restaurant + Bar and Tetsuya's.

The menu is built around what Tikaram calls his philosophy of great food, friends, fishermen and farmers. Australian seafood, meat and seasonal produce run through a distinctly Cantonese lens, evolving the Brisbane original into something shaped for the Northern Beaches. Given Tikaram's own upbringing on the NSW North Coast, surfing, fishing and life around the water, the Manly setting isn't incidental. It's a chance, he says, to reconnect with producers and suppliers across Sydney and build something that feels tied to both the harbour and the community around it.

Stanley is scheduled to open at Manly Wharf in September 2026.
