The Verdict

The crew behind S.A.S.H and Sly Fox have taken over Darlinghurst Bar, Stanley’s, and revived it with a hot new Miami-Vice themed makeover. Paying homage to the sunsets and statement blazers of the 80s cult-classic TV show, Stanley’s is fully decked out with pinks and teals. 

Leaning into disco-house vibes where locals can embrace their inner-diva, Friday and Saturday nights will feature a roster of killer local and international acts while Thursdays are BYO Record Nights and will be reserved for budding talent, meaning if you're a DJ in the making, you can book a spot on the decks. 

The drinks compiled by Java Muskitta (Button Bar) pack a tropical punch. Our faves include the popcorn pina-colada, mixed with rum, Coco Lopez, popcorn nectar and pineapple juice, and the "Flamingo Run", a concoction of watermelon, vodka, pomegranate and basil. Stanley’s is also set to play host to a rotating selection of craft beers from Sydney’s best local brewers.

When it comes to late-night munchies, Stanley’s has got you covered with their gourmet toasties. The "Triple Dare" is camembert, truffle and vegemite combo which let’s face it, is a real elevation for vegemite. Grilled cheese purists have also been catered for with the traditional triple cheese on sourdough.

Bar Demo

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
