There's something about hotel bars, especially the sort that serve martinis and caviar. If this old-world elegance is definitely your style, you'll want to drop into The Bar at the InterContinental Sydney Double Bay. 

While this specific hotel bar has a long history, serving the likes of Elton John and Princess Diana, these days it's led by Sydney restauranteur Maurice Terzini (Icebergs Dining Room and Bar, CicciaBella, RE). 

Terzini's update on this iconic spot is a piano lounge meets supper club inspired by the slick hotel bars of New York, Paris, and Rome.

Working alongside long-time business partner Dave Owen, chefs Lewin White (Icebergs, Quay, RE) and Denny Lohanda, as well as drinks creative director Ana Page, here you're in for decadent martinis made tableside, Icebergs Blood Marys, N25 Kaluga caviar, spanner crab lasagnette, and more. 

The look and feel of the bar have been transformed by Sydney-based experiential design practice Alfred and it now features a baby grand piano, a soft cherry hue throughout, vintage silverware, and newly commissioned works by artist Vicki Lee.

Terzini has a roster of events and activations in the bar queued up, including but not limited to  The Piano Man Scot Finnie playing three nights per week.

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
