The Bristol is a five-storey CBD pub with a rooftop bar, a sports bar, a cocktail lounge, a lush nightclub, and a new restaurant on the way. 

Formerly known as The Bristol Arms, the pub dates back over 120 years. In 2024, the heritage-listed pub still sits proudly on a Sussex Street corner but has reopened with a whole new look. 

Downstairs, you'll find a sleek public and sports bar doing cool and casual Greek food like souvlaki wraps, lamb pastitsio, and beef brisket moussaka. One level up is a soon-to-open restaurant from a much-loved Sydney chef. While details are yet to be revealed, we do know that the restaurant will be serving elevated but approachable Mediterranean fare. 

After dinner, go up one more flight to drop into Calypso—a nightclub with touches of Salvadore Dali-style surrealism and Studio 54 vibes. Expect bottle service, sophisticated snacks, and party-til-dawn energy with a lineup of some of the city's best DJs on decks, curated by Sydney producer and DJ, Aidan Bega. 

Level up again and you'll find yourself in an old-world cocktail lounge serving top-shelf whisky and fancy signature cocktails.

Finally, the sun-kissed rooftop bar with 180-degree views of the city. The Greek theme continues here with a laidback meze menu, pretty sunsets, wines by the glass, DJs spinning tunes Thursday through Saturday, and a standout Pina Colada made with a lychee twist. 

"The Bristol is not your typical pub, each level has its own identity, creating the recipe for a full guest experience from dining to dancing," says The Bristol general manager, Tom Corbett. "Start where you please, The Bristol just keeps offering more, it is its own precinct with something for everyone.”

The Bristol's public and sports bar, rooftop bar, and Calypso nightclub are now open.

The restaurant and cocktail lounge are due to open soon.
