The verdict

Perched atop The Sheaf in Double Bay (AKA one of Sydney's best bars), this leafy hideaway bar is a perfect retreat for cocktails in a sleeker setting. The Canopy is aptly named for its balcony position upstairs from the merrymaking of the garden pub below, overlooking the giant fig tree and the crowds below.

The interiors bring plenty of the outdoor in, with pretty tiled tables and all sorts of botanical curiosities to explore within the cupboards and shelves lining the walls.  

There are a range of spaces to while away your summer too. You could stay close to the bar, where the signature gin and tonics form the highlights. Craft your own bespoke gin and tonic carafe, or enjoy a few of the craft gins from around the world that have been expertly matched with a variety of dehydrated fruits and other goodies. 

For some more sunshine, bring your drink outside, or to the balcony area for some dappled light through the fig tree. There's also a cushier area furthest from the bar for easier conversation-making with your cocktails. 

Order some oysters pre-dinner, or turn your cocktail into your dessert with some strawberry notes. Either way, you're in for a perfect Sydney summer.

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
