The verdict
After a long awaited restore, Cauliflower Hotel is now launching their own specialist Rum Bar & Kitchen on the rooftop in Waterloo. With a rock inspired bar, you can share your food whilst listening to live music every Saturday night and Sunday afternoon or simply enjoy a beer or two with your mates as you watch the footy.
The new chef, Billy Stamp is putting his making the menu his own, serving a selection of Mexican inspired foods such as tacos and fajitas. All the dishes have gluten free options too, so no one will miss out the bold flavour combos coming out of the kitchen!
If it’s the Caribbean and cocktails you’re after, then this rooftop bar will have you relaxing with a signature cocktail in hand and after a few, the tropical décor will have you thinking that you’ve been whisked right to St Lucia. The Cauliflower Hotel’s new Caribbean is the only place you’ll find the good stuff from St Lucian Rum distilleries, which means, other than in the real Caribbean, you won’t find brands like Forgotten Cask, Admiral Rodney & their Chairman’s Reserve Range at any other bar. With over 90 rums and spirits, wine and beer options, you will definitely not go thirsty!

Bar Demo
Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
