We all know that eating is one of life’s greatest pleasures and the folks at The Italian Willoughby agree. That’s why they’ve gone and created a menu that not only showcases the best of hearty Italian cuisine, but also focuses on health and sustainability. We know, it’s the dream. Here they use organic Australian flour and the dough is fermented for three days, which means that it’s easier to digest and just as delish. We recommend starting with pasta—go for the traditional buffalo ricotta and saffron ravioli, served with creamy pumpkin and mascarpone sage sauce, before moving on to one of the pizzas. It’s why you came, after all. Order the funghi formaggi (you can’t go wrong with mushroom and four cheeses), or the nemo—garlic prawns, calamari, zucchini, pops of cherry tomato, crisp parmesan, creamy mozzarella, and spicy chilli oil atop a béchamel sauce base. Finish it all off with one of the (mandatory) desserts like the vanilla panna cotta or the dark chocolate tart, which is even vegan.
