25hours Hotel The Olympia is shaking up Sydney’s stay scene with its first Australian outpost, landing on the city’s most iconic intersection—where Paddington, Surry Hills, Darlinghurst, Kings Cross and Moore Park collide.

The hotel is home to four venues in collaboration with London hospitality legends, Studio Paskin: The Palomar, The Mulwray, Jacob the Angel, and rooftop bar Monica—each promising their own distinct flavour, from late-night cocktails to leisurely long lunches.

At the helm is Jake Guilfoyle, a hospitality heavyweight with stints at QT Singapore, QT Gold Coast and Hyde Melbourne Place under his belt.

“I grew up in Sydney, and to lead a hotel that celebrates individuality, creativity and history in my hometown is very special,” he says. “We’re building something that lasts—a full experience that locals and travellers alike will seek out.”
