The verdict

Located adjacent to the stunning lobby at Primus Hotel Sydney, the menu at The Wilmot reflects the Asian and European style of the hotel. Executive chef, Ryan Hong (you may know him from Rockpool Bar and Grill, Black by EZARD and ABODE) has crafted the menu to serve contemporary cuisine with an Asian twist.

Open for breakfast from 6.30-10.30am, lunch from 12-3pm and dinner from 6-9.30pm, you can get a delicious feed for all of the essential meals. The classic buffet breakfast is on offer with everything from savoury to sweet with hot mains available to order. For lunch you’ve got the 18-hour braised short rib or the seafood risotto with seaweed, prawns, pipis and mussels to keep you going. Dinner sees a whole host of favourites including dishes such as quail and chicken rolled with chicken mousse and crispy salad and a main of Clover Valley lamb loin with pearl barley, sweetbread, lamb shoulder croquettes and red wine jus. 

Dessert, of course, is a must, especially when you see the likes of chocolate and brioche pudding with chocolate sauce and coffee crumb on the menu. To complete the perfect dining experience, there is a selection of international and local wines available for any time quaffing. Open seven days a week for breakfast, lunch and dinner, get your bellies ready to experience world-class dining.
