It’s one of the bigger openings locked in for Sydney this year, and now Sunday Co. has officially revealed a little bit more info about Vito’s—a grand Italian-American restaurant set to land inside the heritage Burns Philp Building this August.

Taking over 11 Bridge Street, Vito’s leans into the drama and nostalgia of mid-century New York dining rooms. It’s the most ambitious project yet from the team behind Morrison’s Oyster Bar and Grill and Whalebridge, designed with the idea of creating a future Sydney institution.

Inside, the heritage space has been reworked into a sprawling 170-seat dining room, complete with soaring ceilings, wrought-iron columns, marble bars, and rows of burgundy leather banquettes.

Led by Craig Madgwick, the design pulls together polished marble, brass detailing, custom chandeliers and layered textures to create a room that feels lived-in from day one—almost everything has been custom-made.

There’s a mezzanine overlooking the main floor, grand booths tucked into alcoves, and just enough theatre in the lighting and detailing to make the whole room feel cinematic without tipping into excess.

In the kitchen, head chef Michael Fox (ex-Carbone Hong Kong) is steering the menu towards classic Italian-American territory—generous, flavour-driven dishes that nod to New York’s immigrant food culture, but with a more refined hand.

Expect items like crab orecchiette with green garlic butter, prawn and scallop agnolotti, scampi crudo and serious cuts of steak cooked over a custom grill. Dishes are designed to feel bold and recognisable, while still dialled up in terms of technique and produce.

Vito’s is due to open in August 2026—running from midday through to late, seven days a week.
