Waterman’s Lobster Co. is rolling into Bondi this summer for a three-month stint by the beach and they are bringing their much-loved lobster rolls with them. The second Sydney outpost by owners Matt Swieboda, Tristan Blair and Nate Howell, they are excited to get back to their lobster shack roots.
The menu will be smaller than the Potts Point restaurant and will focus on their signature style of lobster rolls, as well as a selection of sides and salads such as kingfish tartare. The wine list will showcase mainly Australian wines and the cocktail list won’t disappoint either (hey there, Ritz Spritz).
Doors opened on 26th December and the entire menu is offered takeaway. So you can trot back to the beach with your lobster loot, and continue soaking up the rays (responsibly of course).
