And to get those anticipatory juices flowing, the market has just revealed another ten exciting businesses that will be added to its already stacked line-up in 2026.
“The strong level of interest we’re seeing from traders reflects the market’s reputation as a thriving
retail environment,” said Fabienne Reilly, general manager, Adelaide Central Market, which was birthed in 1869 after a group of unhappy produce traders left the East End Market and set up shop on a vacant piece of land between Grote Street and Gouger Street to sell their food.
“For more than 150 years, the market has proudly been based on connection, storytelling and a
genuine sense of community. These new traders will bring fresh ideas and different quality
products while complementing our long-standing family-owned and independent traders who
have shaped the market to what it is today. As we prepare for the market’s next exciting chapter, our focus remains on protecting the authenticity, character and sense of community that visitors know and love.”

In addition to new traders, the Adelaide Central Market expansion project is expected to boost the South Australian economy by a whopping $135 million, fueled in part by an extra 1 million visitors per annum, in addition to the existing 8 million visitors to the market each year.

Who Are Adelaide Central Market's Newest Traders?
Following the first round of traders already announced earlier this, another ten traders - taking the total to 20 - are set to join the Adelaide Central Market in 2026. These new market additions are led by Findon-based brewery, Shapeshifter Brewing Co, the first-ever craft beer trader to open its doors inside the market.

iconic destination," said James McCall of Shapeshifter Brewing Co. "Bringing our brewery alongside the other traders at such an institution is something special. We couldn't think of anywhere we'd rather open our second location, and we're proud to be bringing independent, locally made craft beer to the market."
Returning to the market after a 15-year hiatus, O’Sushi O’Bento is back with its specialist dine-in and takeaway sushi and bento boxes, a welcomed win for lovers of their fresh sushi rolls, miso soup, and Tokyo-worthy Japanese meals - chicken katsu, spicy pork, and teriyaki chicken.

"For 15 years we proudly served high-quality Japanese cuisine in Chinatown," said Jae Lee, O’Sushi O’Bento. "Now, we are thrilled to start our new home at the world-class Adelaide Central Market. We can't wait to open our doors to the second chapter of O'Sushi O'Bento greeting both new and familiar faces."
Next up, specialy coffee shop stalwart, Caffe Fontana, owned by the iconic Grind Roast Master Central Market, will open inside the revamped market, alongside the Crepe Bar, serving French-style crepes and homemade lemonade to market visitors taking them back to Paris.

Frantic Whisk, a small family-owned Adelade Hills producer, is bringing its luxury handmade biscuits and stroopwafels to the market, as is the Riverland's Freestone Farm, with its artisan pantry products, fresh produce and local wine to market goers.

farming business to the market," said Lucy Clements, Freestone Farm.
"We are the farmers, growers and makers, who are proudly bringing our cellar door and providore to the city with seasonal fresh produce, wines and pantry goods.”

For market guests wanting a quick and easy work lunch or dinner to eat during the week, Local Kitchen Co. is bringing its nutritious and convenient ready-made meals to the market.
Matcha lovers will be impressed by the addition of Matcha K and its authentic matcha imported from Japan, alongside some delicious handcrafted desserts, while purveyors of South American cuisine will relish in the bowing of Poderosa, a traditional South American grocer that previously completed two residencies in the popular Producer in Residence Program.
Lastly, Hummus Hustle will be serving up its freshly inhouse-made hummus and build-your-own dishes steeped in generations of traditional Lebanese family recipes. Hayete!
Here Are the Traders Already Confirmed to Open at Adelaide Central Market

Madam Seafood will open its first dedicated standalone store inside the market and is joined by Adelaide Hills chocolatier Red Cacao, which serves up the dreamiest hot chocolates and other cacao goodies to warm the palette and heart, as well as South Australian producer and supplier of eggs for more than 50 years, Rohde Egg Co., which is opening its very first retail stall.
McLaren Vale's Never Never Distilling Co. is bringing a bar, dining and retail concept to the heart of the market, alongside neo-Japanese cafe Yuku Do, which is set to will serve its famous sandos, onigiri and matcha drinks to local market visitors. Not to be outdone by everyone's most trusted sushi maker, Sushi Train, and voted Australia's best bakery in 2026 - Banana Boogie Bakery.
