Of course, a stay at the soon-to-open Andaz Gold Coast is a pretty appealing prospect in its own right, but being the foodie that I am, it’s the dining and drinking experiences that have me most excited. With four separate venues spanning an all-day lounge, a Mediterranean-inspired restaurant, a poolside dining destination and a cocktail bar, there’ll be plenty of reasons for locals and visitors alike to make their way to Broadbeach, even if they’re not planning on staying the night.

The culinary offering is being led by Executive Chef Matthew Bentley, alongside Nove Chef de Cuisine Rafael Dias, with a shared focus on Australian produce, particularly from Queensland and the Northern Rivers. In fact, almost 70 per cent of the produce across the venues is expected to be Australian, with local suppliers including Miami Fish Market, Australian Bay Lobster, Bread Social Bakery, Nimbin Valley Cheese and Westholme Wagyu. But while there’s a common thread running through the kitchens, each venue has a rather different proposition.

Nove

If you’re someone who likes to order a little bit of everything for the table, Nove should be right up your alley. The hotel’s signature restaurant takes inspiration from Catalonia, the Basque Country, the Côte d’Azur and Italy, with a menu built around seasonal produce, generous sharing plates and flame-licked food. A stone-hearth oven sits at the centre of the kitchen, turning out dishes like clay-pot roasted Sommerlad heritage chicken with mushroom and brandy sauce, and koji-glazed Moreton Bay bugs with Spanish Bomba rice, squid ink and piquillo aioli. There’s also a tableside-finished tiramisu that sounds pretty irresistible.

The wine list is worth a look, too, with around 160 bottles spanning Italy, Spain and France, alongside a strong showing from Queensland producers including Ballandean Estate, Symphony Hill and Golden Grove. I’m particularly pleased to see the Granite Belt and South Burnett getting some attention here.

Vista Lounge

For those who prefer their hotel dining a little more casual, Vista Lounge is set to be an easy drop-in from the moment the day begins. Think properly made coffee, matcha and a line-up of signature cold-foam drinks, including the signature tiramisu cold foam that might just become a crowd favourite.

Breakfast ranges from ricotta hotcakes with Hampson honeycomb butter to Merna’s crumpets and eggs Benedict, while the bakery counter will be stocked with pastries, an Andaz crepe layer cake and a bespoke white chocolate and strawberry Milkman cookie. Later in the day, the menu moves into all-day territory, with salads, sandwiches, pizza al taglio, and a particularly enticing Westholme Wagyu cheeseburger.

Andaz Pool Club

I can already see the appeal of spending a sunny afternoon at Andaz Pool Club, particularly if the plan involves a few dips, a cocktail and a table full of things to share. The poolside venue is bringing a Levantine influence to its menu, with mezze, grilled skewers and flatbreads. I’d start with freshly shucked oysters before moving on to the signature mezze platter—think dips and stonebaked pita—and then finishing with the Fremantle octopus skewers with taramasalata. Delicious.

The drinks menu is equally suited to a few hours in the sun, with cocktails including the likes of the bunya colada, made with Husk rum, bunya nut, macadamia, pineapple and toasted coconut, and the sunset sour, combining Hennessy, orange, toasted agave and bitters. There are eight private cabanas available to hire, and the venue will welcome non-hotel guests, with live DJs every Friday and Saturday. I suspect this one will be popular well beyond the hotel pool crowd.

Verde Bar

When the sun starts to drop, Verde Bar will be the spot to head for a pre-dinner drink that has the potential to turn into a much longer evening. Inspired by the Gold Coast hinterland, the bar pairs deep green interiors with sunset views towards the mountains, a vinyl soundtrack and a cocktail list making good use of local ingredients. The verde martini, made with burnt butter gin, bergamot, dry vermouth and toasted coriander, sounds particularly intriguing, while the hinterland spritz brings together rum, passionfruit, toasted coconut, pandan and lemon myrtle foam.

And while the cocktails might be the main drawcard, the food menu is just as enticing. Alongside marinated olives, freshly shucked oysters and jamón serrano, you’ll find chicken liver parfait with negroni jelly, Westholme Wagyu tartare, a Moreton Bay bug roll and an LP’s sausage sanga. In other words, there’s every reason to make an evening of it.

With four venues covering just about every occasion from a morning caffeine fix to a late-night cocktail, Andaz Gold Coast is giving Broadbeach plenty of new dining destinations to look forward to. Whether you’re stopping by for a quick coffee, making a reservation for a long Mediterranean lunch or settling in for sunset drinks, I have a feeling the hardest part will be deciding where to start.

Bookings are open for these four venues and can be made here.
