Paddock Bakery Is Opening A Residency In Pacific Fair With A Build-Your-Own Cold Foam Bar
We’ve all been there: you’re struck with a craving for Paddock Bakery’s iconic creme brulee doughnuts but the idea of finding a park around the Burleigh institution has you hesitating. Well, soon you can visit Gold Coast’s biggest shopping destination to get your Paddock fix, alongside an exciting new drinks program that’ll make this residency worth a regular visit.

The Pacific Fair pop-up will offer a condensed version of the Paddock experience you know and love, with their signature baked goods made from scratch on the daily in Burleigh and brought to Broadbeach. The cabinet will host a rotating range of cookies, doughnuts, cakes and pastries, as well as wood-fired sourdough breads, sandwiches and salads available until sold out. You can take your treats home, but we also understand waiting can be torture so we’ll be enjoying ours in the intimate 30-seat venue.
Plus, it’s not just a copy-and-paste with a build-your-own cold foam bar at the heart of the residency. There will be four cold bases on tap: tried-and-true faves cold brew, iced latte and iced matcha, as well as a Pac Fair exclusive in the cinnamon doughnut iced latte. From there, you can choose a dessert-inspired cold foam to pop on top (think hazelnut brownie, creme brulee, raspberry VoVo, banana bread or Dubai chocolate) and then finish your creation with the likes of Paddock cookie crumbs, biscoff, coconut and more.

Feel free to mix and match to your heart’s content, or try Paddock’s selection of signature combos if you prefer to leave it to the pros (we hear the cinnamon doughnut iced latte with creme brulee cold foam is a showstopper). If you’re just after your regular cuppa, Paddock will be pouring Single O and house specialties like their signature hot chocolate with torched marshmallow for winter, cold-pressed juices, house-made iced teas, ceremonial matcha and shakes.
You’ll find the Paddock pop-up on the ground floor of Pacific Fair behind H&M from early August 2026.
