Byron Bay’s dining scene just got a whole lot fresher with the arrival of Byron Bay Oyster Bar & Seafood Restaurant at the stunning Hotel Marvell

Inspired by the lively oyster bars of New York, this stylish new spot combines laid-back coastal vibes with an elevated dining experience. Expect pristine oysters and the best of Australian and New Zealand seafood, all served up in a chic setting that’s equal parts relaxed and refined—a true celebration of the sea, right in the heart of Byron.

Located centrally on Marvell Street, the restaurant is a love letter to the ocean’s bounty, with oysters as its star attraction. The team takes freshness seriously, with a state-of-the-art, land-based oyster tank that can purify and hold up to 500 dozen oysters at a time, restoring them to the pristine condition of those enjoyed straight from the farm.

Hotel Marvell’s General Manager, James Pearce, explains, “...every single oyster we’re serving at Byron Bay Oyster Bar & Seafood Restaurant is as fresh and pure as nature intended. Nowhere else in Byron Bay will you find oysters as fresh as those that we’ll be shucking.”

The menu at Byron Bay Oyster Bar leans into simplicity, allowing the ingredients to shine, nay, sing. A rotating selection of live shucked oysters take center stage, with various cold and hot garnishes on the menu including natural, mignonette, bloody mary, Kilpattrick, baked miso and Rockefeller and lemon and herb butter. 

Local oyster lovers are in for a treat, with an Oyster Hour from Tuesday to Saturday, between 5pm and 6pm, where you can enjoy $3 oysters. Don’t mind if we do.

Beyond oysters, the raw bar offers a range of delights, from a caviar trio served with potato rosti and confit egg yolk, to rainbow trout tartare with bloody mary vinaigrette, and tuna carpaccio drizzled with sauce tonnato. Starters include everything from succulent lobster rolls and BBQ Mooloolaba prawns with chermoula, to half-shell scallops with garlic butter.

The mains continue the seafood-forward theme, with dishes like whole fried market fish paired with sauce vierge, or Fremantle octopus complemented by a rich tomato relish. For those who crave variety, the grill menu includes options like a 250g swordfish loin, 350g Bangalow pork chop, and a pure Angus OP ribeye, all served with sauces such as caviar beurre blanc, Café de Paris butter and more. 

The fitout at Byron Bay Oyster Bar is just as inviting as the menu. Think: rich ochres, tactile textiles, and lush greenery create a warm, coastal ambiance that feels both welcoming and sophisticated. Choose from a front-row seat at the live shucking station, settle into a cosy booth, or soak up the atmosphere in the indoor-outdoor space that perfectly captures Byron Bay’s laid-back charm.
