Coastal dining has reached a new peak with Haven—Mondrian Gold Coast’s much-anticipated restaurant and beach club, bringing play and palate pleasers together in Burleigh Heads.
The expansive space spans a third-floor dining room, pool club, private cabanas and a sunset bar to take you from sun-drenched lunches to twilight drinks with ease. Throw in the Pacific Ocean views and beats via curated playlists, DJs on deck, and live performances, and you have yourself the recipe for a perfect occasion.
Internationally renowned Executive Chef Aaron Teece (previously EST., Felix, Manly Pavilion) leads the kitchen at Haven, honed by his star-studded portfolio that includes private cheffing for Margaret Thatcher, the Queen, Kate Moss, Richard Branson, Keira Knightly, and Tom Hanks. The cuisine? Grounded in the coastline, featuring seafood from Cairns, the Sunshine Coast, and Northern New South Wales, alongside premium paddock-sourced meats and seasonal produce from the hinterland. With a woodfire grill at the heart of the kitchen, both the restaurant and poolside menus offer a world of flavour, with quality ingredients grilled over flame, fried crisp, woodfire roasted, or delicately steamed.
“I want people to feel the season and the source with every bite, because when ingredients are respected, simplicity speaks loudest,” Teece said. “We’re not trying to overwork anything—the quality of the produce does the talking. It’s all about creating food that feels grounded but still sparks a sense of occasion in this beautiful part of the world.”
The polished yet approachable offering leans on regional sourcing and open-flame techniques, across the raw bar, share plates, and daily-evolving dishes. From chilled seafood platters to decadent lobster fries, and line-caught fish finished just the way you like, these thoughtfully prepared dishes are designed to complement the coastal way of life.
Similarly, the drinks list gives you plenty to cheers about, with an extensive champagne selection, Australian and international wines, a coastal-inspired cocktail menu, and a dedicated agave offering featuring tequila, mezcal, raicilla and bacanora. Whether you’re enjoying your sips poolside in a cabana or at the sunset bar, you can expect an experience helmed by the seasons and refined by the sea.
Haven opens on 5 June but bookings are available now here.
