Palette is the sophisticated restaurant gracing the ground floor of the new HOTA Gallery and offers a unique blend of art and food. Treat your palette with their fresh and modern Australian menu, variety of degustation menus and fully curated wine list. The food philosophy here is simple, fresh and local, with an emphasis on using only the best seasonal produce available.
Dive into the mouth-watering nautical seafood bonito cooked in native ginger leaf or sample unique Australian flavour combinations, like the dry-aged Burrawong Gaian duck with a riberry and rosella sauce. We love that Palette is catering to our plant based friends and boasts an extensive vegetarian menu. Think—house made silken tofu with watermelon radish, blue quandong and native tamarind or delicacies like oxheart tomato tartare and beetroot tartlets. Of course, all these exquisite dishes are best paired with a selection of quality drops from the extensive curated wine list.
Your art experience is extended at Palette, with talented Executive Chef Dayan Hartill-Law taking inspiration from major exhibitions at HOTA Gallery to demonstrate just how naturally art and food combine. The venue itself sings of artistry and showcases natural materials like timber and stone, which seamlessly work together to create a truly stunning space.
