Opening Soon: Meet The Sustainable Stay Bringing Eco-Luxury To The Heart Of Adelaide
A hotel should be more than a room. It's your base for exploration and your sanctuary to recharge.
Crystalbrook Sam is Adelaide’s newest five-star hotel and the first South Australian address from Crystalbrook Collection Hotels and Resorts. Known for stays that balance sustainability and luxury, Crystalbrook gives each of its hotels a distinct personality, reflecting the local region. Sam is no exception.
Designed by South Australian studio PACT Architects, everything from the decor of the 196 rooms and suites to the building’s sculptural elements, distinctive sawtooth rooflines and exteriors of bronze-coloured metal and local brick are made to echo the region.
With a rooftop restaurant and bar, day spa, sauna, fitness centre, cafe, and library nook, your needs are catered to. And when you want more, the city’s at your doorstep.
Crystalbrook Sam is located on Halifax Street, a peaceful oasis just three streets from the Central Market and a 15-minute walk or 5-minute tram from the centre of town. Gigs, galleries and nightlife await, with laneways and boutiques to explore. For nature therapy, mosey a few streets south to Adelaide's immense parklands.
Beauty, Comfort And An Eco-Friendly Stay

Every room is one with a view, whether its north towards the city lights or east to the Adelaide Hills; you have the best seat in the house. Decor is inspired by the South Australian coast, with soft, natural tones and textures and warm, light-washed interiors. Your room features sculptural works by South Australian creators, which you’ll also spot across the lobby, halls, venues and wellness space.
Choose from a King, Twin and interconnecting family rooms, or go luxe with the one- or two-bed Suites (deep-soak bath and your own booze cart? Yes please).
Feel even better about your stay with 100% waste-free bathroom amenities and no single-use plastics. Mobile check-in and a digital compendium keep paper to a minimum. Coat hangers? Recycled paper. Key card? Bamboo. Bathroom bottles? Not a single-use one in sight.
Head To Matines For South Australian Flavour And City Views
Matines rooftop bar and grill is your destination for a long lunch, sunset aperitif and elegant dinner, complete with an illuminated sculpture and views of the city lights.
Head Chef Enrique Mancilla showcases the best of the state.
“We're working with South Australian seafood, meat and produce, cooking over fire with a focus on simplicity to let the provenance speak for itself,” he says.
Meats arrive perfectly flame-grilled, such as a Limestone Coast Berkshire tomahawk and Mayura Station wagyu kainomi. The house bread uses local barley and rye, served with strawberry gum butter. For dessert, a seasonal sweet like ‘A Fig and Its Leaf’ with Riverland fig, chamomile parfait and lemon verbena.
Wine spans from the Adelaide Hills to the sunny shores of Spain, but you could come for martinis alone. For dirty fans, a Charcuterie Martini with pork fat-washed vodka is matched to Coffin Bay Pacific Kilpatrick oysters with cured pork jowl. Or head for the sea with the Oyster Shell 50/50 Martini, a blend of oyster shell-infused vodka, Never Never Oyster Shell Gin, Manzanilla sherry, sweet vermouth and seaweed shrub. Slide up to the long bar for Martini Hour and oyster menu from 5pm-6pm, Monday to Friday.
Indulge And Unwind At Eléme Day Spa
After a day exploring the city, what better way to wind down than with a little time to yourself? At Crystalbrook’s signature spa brand, Eléme Day Spa, restorative massages, indulgent facials, and signature body rituals offer just that, with treatments drawing on South Australian ingredients such as olive oil, Kangaroo Island honey and native botanicals.
Take your relaxation a little further with a dip in the heated outdoor pool or a session in the sauna. Or, if you're feeling energetic, go the other direction with a workout at the fully equipped gym.
Curl Up With Coffee And A Good Book At Café Sami
Need a latte and house-baked pastry pick-me-up? Look no further than Café Sami, an all-day café and bar conveniently located in the lobby. As well as sweet treats and light bites, it slips into casual evening vino mode in the evening. Day or night, there’s a little library nook to hide away with a good novel. Take a wine and some nibbles with you. Luxury.
