Alejandro Saravia Is Opening A Flinders Lane Restaurant, Documenting The Whole Process On Instagram

Alejandro Saravia, the chef behind Farmer’s Daughters, is working on his most ambitious project to date. Alongside his hospo collective the Renascence Group, Saravia has announced Masia, a new flagship restaurant on the ground floor of the 51 Flinders Lane development. The development is set to open later this year, and will feature a range of casual and fine dining outlets to complement the dual office towers above it. 

While the restaurant doors aren't set to open until summer, Masia is already letting the public in—just in a different way. A behind-the-scenes video diary on the restaurant’s Instagram account will document the project as it unfolds—from menu development and wine selection to the craft behind the more difficult decisions.

What we do already know is that Masia will anchor everything from its prominent position in the new pedestrian laneway, and Saravia has shared that the menu will be shaped by the places and flavours that have defined his career so far—introducing Peruvian cuisine to Australian diners and building some of Melbourne’s most celebrated restaurants. 

In its commitment to sustainability, Masia is also pursuing a Food Made Good global certification with an all-electric kitchen built around an open fire.

Masia is slated to open at 51 Flinders Lane in summer 2026/27. Founding Guest registrations are now open on their website, and posts are already spilling teasers over on Instagram.
