Sip Golden Hour Cocktails With Flagstaff Gardens Views At This 18-Storey CBD Stay

For the first time in over a decade, global hotel group Mercure has opened a new-build in the city centre. Across 18 storeys, Mercure Mebourne La Trobe Street houses 195 rooms, a gym and a restaurant and bar. 

Designed by Melbourne-based Sora Interiors and LiFE Architecture, the hotel has an industrial edge, while offering plenty of warmth. Nods to its history as a tin factory are scattered throughout the building, most notably in the art installation greeting guests behind the lobby desk—depicting tin offcuts you once would’ve found across the factory floor. 

Sustainability was also front-of-mind in the construction process, with energy-efficient features including solar panels, smart LED lighting, advanced insulation and on-site EV chargers integral to the building's design. The bedding even helped to recycle 54,154 plastic bottles with the DreamGreen initiative

True to Mercure form, guest rooms take inspiration from the local surroundings—in this case, the nearby Flagstaff Gardens. Think spring-inspired tones, natural-leaning hues and floor-to-ceiling windows letting in plenty of natural light. Select suites even include private balconies, so you can soak up all that fresh air from the comfort of your own room. Perfect for a morning coffee while you watch the city wake up. 

“We’re in a unique pocket of the city and are fortunate to have great separation between ourselves and other tall buildings on all sides,” General Manager Justin Phillips says. “So no matter where you stay in the hotel, you’ve got great views, whether it’s towards Docklands, back towards Flagstaff Gardens or views of the CBD and out towards North Melbourne.”

Head up to level six and you’ll find Foundry, a restaurant and bar open to both guests and the general public, complete with a balcony lined with city views, perfectly positioned with a golden hour backdrop for pre-dinner drinks. The cocktails are the star of the show at the bar, with our pick being the Night Owl, a espresso-martini like tipple made with wattleseed-infused Bulleit Bourbon, Mr Black coffee and caramel miso. The food menu favours local, seasonal ingredients, with hearty dishes (think schnitzel and steak) and share plates. In the mornings, a buffet breakfast spread gives you the choice between (or as much as you want of) fresh pastries, cereal, fruit and hot brekkie essentials (eggs your way, mushrooms, bacon—you name it).
