Aussie-born chef and Singapore local Peter Smit loves a creative challenge. Having worked in a string of kitchens across Australia, London and Singapore, the ambitious Aussie has refined his culinary chops across the globe, but it was his time at a fine diner in the farmlands of South Australia where he first experimented with nose-to-tail cooking.
A few years later in Singapore, the first iteration of Dirty Supper was born as a series of pop-up dinners in partnership with Sago House. Fast forward to 2024, and Smit has brought his renegade cooking style to a permanent venue, taking over an iconic Tiong Bahru spot.
The offering? "We specialise in whole animal cooking. Nothing goes to waste—you can score BBQ duck neck, pork heart and duck head for under $10 here," Smit says. "We also recently dropped Dirty Sips—a rotating cocktail menu full of classics and dirty twists."
Together with the folks at Singapore Tourism, we asked the Aussie export to share his top Singapore spots to decompress when you've finished making your way through his wallet-friendly dishes.
Grab A Feed At Scissor Cut Curry Rice
“First up you know I gotta hit Scissor Cut Curry Rice, I’m an absolute regular,” he says.
A Beach Road institution, this spot landed in the area fifty years ago and was named after the distinctive Hainanese cooking style of cutting ingredients into bite-sized pieces to make the dishes easier to eat.
For Smit, you can’t go past the Hainanese curry rice. “This is such a comfort feed,” he says. “I dig the thick curry sauce that’s the perfect mix of savoury and sweet.”
Chase The Sun To Sentosa
As a chef who spends his days and nights working in a high-pressure kitchen, Smit is taking any chance he can get to slow down and head out into nature.
“On my day off I love to get outdoors and head for a skate,” he says.
An avid skateboarder, Sentosa’s flat, wide roads are made for Smit’s longboard on a leisurely cruise to the beach.
“Sentosa is really beautiful and super scenic, it never gets old,” he says. For him, the magic lies in its slew of outdoor adventures and sprawling, sandy beaches—perfect for a paddle on a sunny arvo.
Ola Beach Club is Smit's go-to for paddleboarding and kayaking—plus a Hawaiian-influenced menu with fresh poke bowls and ice-cold beers makes it a dream destination for lunch.
Kick Back With A Tipple At A Natural Wine Bar
After working up a thirst at the beach, it’s time for a knock-off. “No day off is ever complete without a cheeky drink at Le Bon Funk,” Smit says.
A collection of neighbourhood wine bars known for their accessible drops and produce-led plates, you’ll usually find him parked up at Le Bon Funk’s Club Street venue. “I usually kick up on the terrace,” he adds.
Fuss-free and brimming with locals, Smit reckons the Club Street spot is perfect for parking up and ordering a natural wine to close out the day.
