Pipis North: Albert Park’s Seafood Stars Launch Summer Pop-Up In Fitzroy
Pipis Kiosk—the Albert Park institution that’s had us hooked on its pristine seafood since day one—is crossing the Yarra with a summer pop-up that’s equal parts sun-kissed escape and northside cool. Meet Pipis North, a strictly limited takeover of the old Alta Trattoria space on Brunswick Street, Fitzroy, where the team’s spinning their coastal magic until the end of February.
Co-owners Tom Hunter (Director and Head Sommelier) and Executive Chef Jordan Clay, fresh off slinging those iconic Pipis flatbreads, have teamed up with Head Chef Dave Kerr to turn this spot into a Basque-inspired seafood snack bar. They're channeling San Sebastián pintxos bars teleported to right to Fitzroy central, with briny seaside feels, bites for passing around and drinks that keep you planted.
The Menu
Clay stays true to Pipis roots (fresh, sustainable catches in simple dishes) but remixes it with a northside twist. You’ll find the cult salt & pepper squid and signature flatbread holding court alongside newcomers like:
- Spanner crab on mini crumpets – $12 (pure buttery bliss in one bite)
- King prawn tempura with BBQ spice – $12
- Swordfish belly skewers in jungle bisque – $12
- Marlin crudo with salted watermelon & black vinegar – $28
- Butterflied blue mackerel, shaved cabbage & bone broth – $34
- Fruits of the sea tower – $59 (for when you’re going all-in)
Drinks That Steal The Show
Hunter’s built a seafood-smart drinks list of tight, small-producer stars. Lead with Salty Sips (30ml coastal hits) like Pipis seaside salad gin with fino sherry, tomato leaf spirit or the Laphroaig & oyster kicker.
Half Shucked Happy Hour runs 4–6pm daily: $4 oysters, $16 Melbourne Bitter longnecks and $50 half-bottles Chablis/Riesling/Pinot Gris. One sip becomes the night.
“We’re looking to bring some seaside vibes north of the river over summertime—hot nights, cold drinks and lots of fresh seafood. Pipis North is relaxed, fun and very much about popping in for a drink and a bite—whether that’s a quick skewer and oyster or settling in for the night,” says Hunter.
Pipis North is firing now (launched Saturday, 17 January) at Ground Floor, 274 Brunswick Street, Fitzroy. The're open Wednesday–Friday, 4pm–late & Saturday–Sunday, midday–late (Sun till 8pm). Summer won’t last forever—get in quick.
