Chotto Motto Toki Highball Crispy Fried Prawns

Nothing is better than a refreshing drink to take the edge off the rising mercury. Our drink of choice lately? A light, bubbly and downright delicious Toki highball. 

New to the effervescent drink? This is your sign to give it a sip. Even better, sample it at Collingwood's playful gyoza bar and restaurant, Chotto Motto, while it's serving up the refreshing drink alongside a limited-time dish this month.

We challenged Chotto Motto's Head Chef, Tomoya Kawasaki, to create an exclusive dish that pairs perfectly with a refreshing Toki highball. The result? A seriously tasty serving of fried school prawns.

Let us talk you through the dish. School prawns from Yamba on the New South Wales north coast, are deep-fried to perfection before being topped with lemon and seaweed. To eat it, Kawasaki recommends dunking the crispy fried prawns into the yuzu pepper mayo and washing it down with the Toki highball. Together, this is a match made in snack heaven. New to Toki? It's a Japanese whisky from the legends at House of Suntory. The word toki means 'time' in Japanese and the spirit is an innovative blend of three whiskies from three renowned distilleries—Hakushu, Chita and Yamazaki that pays homage to both Japan's respect for tradition and its innovative spirit.

The Toki highball is simplicity at its best. Over ice, the drink consists of 30ml of Toki whisky topped with soda water and is served with a twist of lemon—refreshing, easy to drink, and most importantly, delicious.
