The Verdict
Hitting the shores of Sandringham is the Mediterranean restaurant and bar, Baia Di Vino. Quite literally translating to ‘wine bay’, Baia Di Vino is set to be a contemporary expression of the simple European coastal life (goals), and Sandringham provides the perfect backdrop with its natural beauty and coastal characteristics, it’s a match made in culinary heaven.
Banquette seating will line the ocean-facing window, accented by a feature tile floor, vaulted ceiling with timber beams, signature marble bar top and a French-wash paint finish on the walls. It’s an aesthetic interior, a perfect fit for bayside dining.
Head Chef and Co-Owner Dino Mohsin (Risvera, Rockpool Bar & Grill) has crafted a menu which looks to commemorate modern-European dining, whilst incorporating delicious references to the venue’s bayside views. Accompanying the wonderfully curated menu, Baia Di Vino will be offering an extensive, European-led wine menu crafted by Sommelier and Co-Owner Vivian Man (Rockpool Bar & Grill) which will see a dedicated wine-by-the-glass offering and premium selection available via a Coravin system.
Sandringham’s latest resident eatery is set to quickly become a local haven for all things Mediterranean, whether stopping by to catch the last of those long summer evenings with a rosé or a long Sunday lunch with the gang, it’s perfect for every occasion.
