We can usually get a pretty good read on a cafe menu in the first 15 seconds. And our opinion of the new spread at Brighton Soul Espresso? Instagrammable as f*ck.
Brighton Soul is already a bit of a cult favourite among the Church St brunch crowd. And now they've re-styled their menu with 60% more #extra. We're talking Quinoa & Pistachio Porridge with saffron-poached pear, Brownie Waffles topped with lime gel, vanilla mascarpone and fairy floss, or maybe an electric blue Hippie Smoothie, blended with algae extract (for that sweet algae-ish flavour).
You can kind of dress up or dress down when it comes to breakfast here. If all you're after is a rockin' baked eggs, owner Roland Aigare and the crew have you covered (theirs comes with tomato & capsicum sugo, bacon chips and danish feta—crazy good combo). There's also a slow-braised beef cheek breakfast burger and a vegan Buddha Bowl, depending on how big a night you had beforehand.
Brighton Soul's drinks list is equally broad. You've got organic blends from Colombia and Brazil, cold drip, Swiss water decaf, loose leaf teas and a seriously good Bonsoy Prana Chai. Pro tip: splash out and try the Konomi Matcha (Japanese or Maple, they're both good).
