The Verdict

By The Glass, a brand-new, intimate wine bar with sixty-five seats, has recently opened in the former Bouzy Bar venue on the bustling High Street strip. The two-year project by owners Ron Dhali and Gareth Yan has been inspired by European hospitality, with the main focus on giving consumers the choice of enjoying their wide range of wines by the bottle, or, by the glass.

“We’ve worked hard to bring something different to Armadale,” says Dhali, with the duo working hard to bring a more ‘adventurous’ restaurant model to the neighbourhood.

Myles-Davis Schiele, the venue manager and head chef, has carefully curated a menu that features sharing-style dishes with native and European flavours that will "constantly change and evolve". The current star of the show is the lamb carpaccio with house-made mint oil and duck fat aioli, taking things to a whole new level is the crispy, maple-caramelized Brussels sprouts or the Sicilian orange salad as a side.

In addition to the sizeable menu is the ultra-large wine selection which includes over 100 local and foreign blends from mixtures around the world including the Americas and Europe. Cocktails are also created in-house, with recipes changing every six to eight weeks. If you’re a sweet fan, sip on a Quincampoix (St Germain, Salers, Lillet Blanc, Prosecco), but if you want something stronger, a CBX v6 (Dry and Sweet vermouth, Massenez crème de griotte, Okar bitter, Dubonnet, Gin) will do the trick.

With an extensive event calendar currently in the works, on the third Friday of each month, the venue will collaborate with local wineries for their 'Wine Dinner' event. You and your crew can engage with various winemakers over 5 courses paired with 5 wines to discover more about the drops you're drinking.
