The Verdict
Egglab has officially packed up shop in Collingwood and has moved to the ever-thriving location of Fitzroy. The result: a new - and bigger - venue for owners Greg Papas and Jana Andrianopoulos, and a newly designed menu for you. Egglab is a breakfast bar, aka a one-stop-shop for all things eggs, that was inspired by American breakfast sandwich chain, Eggslut.
With years of experience in the industry, it’s guaranteed you’ll be served up a top-quality, delicious sandwich at Egglab. The updated menu now features the Vodka Chilli Scramble - we’re talking scrambled eggs, feta and lemon dressed rocket. They’ve also got a halloumi sandwich with grilled halloumi, pesto, lemon dressed rocket and portobello mushroom. Don’t worry if you’re not a lover of change though, they’ve still got some fan favourites - including the Mr Potato Head - from their old menu to satisfy their OG supporters.
If you’re feeling parched and need something to help down the eggs, they have an abundance of tasty drinks on offer too. Ranging from coffees to teas to cold press juices to milkshakes, you’ll easily find something to satisfy your cravings. They’ve also got some delicious sides if you need a little more of a kick to help get you through the morning, including potato gems, waffle fries, hash browns and doughnuts.
Their new location on Johnston Street has allowed them to change the feel of their store too. Their interior, like their menu, reflects the joining of the old and new, with white, clean modern walls matched with old, traditional brick. They also have a slightly increased seating area, all-the-while serving up their same, delicious sandwiches.
If you needed any more convincing, their eggs are free-range from Daylesford, and they’re also fresh and high quality to provide you with the best experience they can. With sandwiches ranging from $8 to $15, this is the cheapest food news we’ve heard in Melbourne for a seriously long time. So, replace that stale, chewy multigrain bread in the morning with these fresh, flavoursome and delicious sandwiches at Egglab. You’ll find it hard to stay away from here once you’ve had just one bite.
