Sometimes simple really is best, and when it comes to a grab-and-go bite or something to cure a handover, a pie is top of the list. That being said, finding a quality pie can surprisingly a harder task than one might think, but a new inner-north gem is making it a whole lot easier.
Say hello to Frankie’s Pie Shop—bringing the fluffy, crispy pastry snack to the Fitzroy Mills Market in a not-so-normal kinda way. What we mean is you won’t see your classic pie flavours in this joint, which is expected when it’s brought to life by an ex-Farmer’s Daughters and Marion chef, Francesca Giorgi Monfort.
“I’m on a mission to elevate Melbourne’s pie scene,” says Giorgi Monfort.
Frankie’s is breathing life back into the classic Aussie delicacy. Sub your typical meat pie for a kangaroo bourguignon coated in a pepperberry puff pastry. Some other daring but delicious combinations include charred cauliflower with leek and aged cheddar, and kimchi with smoked folded eggs and a gruyere custard.
A whole lot of love and labour goes into these creations, taking three days to make these bad boys. All the ingredients are the quality good stuff sourced locally.
A major focus of Frankie’s Pie Shop is minimal wastage, which is why the pies are rectangular. Any scraps that do come about are redirected from the bin and made into tasty goods like cheese sticks.
